You will be surprised how much you come to like the unusual combination of sweet watermelon, hot jalapenos, and lime. A perfect accompaniment to grilled chicken, fish, or seafood. Or just enjoy it by itself as a refreshing and low-cal treat. Yields estimated 7- 1/2 Cup servings. Ingredients

    3 Cups watermelon cut into small chunks (see photo)
    1/2 Cup chopped green pepper
    1 Tbsp jalapeno pepper chopped fine
    1 Tbsp green onion (scallion) chopped
    2 Tbsp fresh cilantro chopped
    2 Tbsp lime juice
    1/2 tsp garlic powder

Directions

In a medium bowl, gently fold together chopped watermelon, green peppers, jalapeno peppers, green onions, and cilantro. Sprinkle with lime juice and garlic powder. Remix all ingredients to incorporate juice. Can be served immediately but is best if it sets for at least 20 minutes. Can also be served chilled. Refrigerate leftovers for up to 3 days.

    Very Good
    I make this all the time. But I use red onion instead. I like the taste better. Also use fresh minced garlic. Then you don't have to wait for the powder to rehydrate. - 1/29/10
