Number of Servings: 84

Ingredients

    Equal parts rice flour, tapioca starch and corn starch = 31/2 cups
    2 tsp baking soda
    1 tsp baking powder
    1 tsp salt
    1 tsp cinnamon
    1 tsp nutmeg
    1/2 tsp ground cloves
    1 cup margarine
    1 cup unsweetened applesauce
    1/2 cup honey
    4 egg whites
    1 15-oz can pumpkin puree
    3/4 cup orange juice (can use other citrus-y juices too)

Directions

Preheat oven to 350F.
Mix dry ingredients. Add moist ingredients. Mix just until smooth.
Put in greased mini muffin pans. Bake in preheated oven for 15m. For larger muffins bake for 25m.

Yield: 84 mini muffins (1 heaping tsp of batter per muffin; large muffins take 5 heaping tsp per muffin)
