Ingredients

1lb ground chicken
1 large egg
approx. 1/2 c. crushed saltines
approx. 1/4 c. crushed goldfish crackers
1 tsp crushed garlic(or to taste)
1 small chopped onion(or to taste)
salt and pepper to taste
Directions
Mix all ingredients in a medium size bowl. Form into a meatloaf and place into a baking dish. cover with foil. Cook on 350 for about 40 minutes or until cooked thru. Makes 4-6 servings.
First of all this is what I do with ground beef. I am trying to get healthier and am dragging my family down with me..this should be just as tasty made with chicken though. IN my regular meatloaf I sqeeze ketchup in it. Spark only listed ketchup by tbsp so I left it off. Also, I do not measure ingredients. Therefore the ones listed are approximate. Recipes for me are guidelines. Play with it and adjust it to your taste!
I made this and it was great! I used a dash of poultry seasoning, a chicken boullion cube, some rosemary..garlic pepper..Change the spices to fit your tastes! Don't be afraind experiment with flavor!
