Introduction

This is something my fiance and I eat after a workout for dinner. It's tasty and has nearly the same flavor as McDonald's Egg McMuffin. They are super fast and easy to make! Ingredients

    1 Thomas' Hearty Grains Whole Wheat English Muffin
    1 Whole Egg (Large)
    1 Egg White (Large)
    2 Slices Canadian Bacon
    1 Slice Kraft 2% Milk American Cheese Singles

Directions

Take a 1cup measuring cup and spray with cooking spray (pam or something similar).

Crack one whole egg into the measuring cup, and seperate the other egg, adding the white into the measuring cup, discard the yolk. Cook in the microwave on 50% power for 1-1/2 minutes, until egg white is no longer runny. If you cook on full power, it will pop and blow up in your microwave -so be warned. You may want to cover it with a paper towel to avoid mess).

Place Canadian Bacon in a frying pan and saute enough to just warm it up. Do not over cook or it will become tough.

Toast the english muffin and place cheese on it while warm. Place one piece of canadian bacon on cheese, then cooked egg (just overturn the cup, it should slide out perfectly formed! :) ), then remaining canadian bacon and top with 2nd half of muffin.
