Ingredients

6 cups warm water
1/3 cup olive oil
1/2 cup
3 tbsp dough enhancer (Kitchen Resource)
3 tbsp SAF instant yeast
6 cups whole spelt flour
2 tbsp sea salt
1/2 cup vital wheat gluten
6 cups whole kamut flour
Directions
Makes 5 loaves, with 16 slices each
In mixing bowl, mix warm water, oil, honey, spelt flour, dough enhancer and yeast until combined. Cover and let rest for 10-15 minutes until bubbly
After 10-15 minutes, add wheat gluten, kamut flour, salt and enough spelt flour to clean the sides and bottom of the mixing bowl
Knead for 5 minutes on low speed in a mixer, or by hand for 5-8 minutes.
Cover and let rest until doubled in size.
Punch down, knead for 2 minutes and let rest again until doubled in size
Divide into 5 equal pieces, or add 1.25 to 1.50 lbs to a kitchen scale.
Shape each piece into a loaf and place in a greased bread pan
Slash top 3 times with sharp knife if desired
Cover and let rise until doubled
Preheat oven to 350 degrees
When doubled, place loaf pans in oven with enough separation between pans to allow for heat to circulate
Bake for 30-35 minutes, or until bottoms of loaves are darker golden and hollow when tapped
Remove from pans and allow to cool on elevated cooling rack.
Slice when cool.
