Ingredients

    1/4 cup whole wheat flour
    1/4 cup enriched white flour
    1/2 tbsp ground flaxseed
    1 to 2 tsp ground cinnamon
    a dash of ground nutmeg
    a dash of salt
    2 tsp baking powder
    2/3 cup lowfat or nonfat milk
    1 large egg
    2 tbsp butter or vegetable oil spread
    2 tsp honey

Directions

In a large mixing bowl, combine all your dry ingredients. If your flaxseed isn't pre-ground, do so beforehand in a food processor. In a second mixing bowl, beat your egg then add milk until fully combined. Melt your butter or spread in your microwave or on your stovetop, then add to your liquid mixture. Then quickly whisk the honey into it. Add the wet mixture to the dry and (this part is important), whisk until *barely* combined. You want your mixture to still have some lumps in it; otherwise your pancakes will be flat. Heat your griddle pan on low (this part is also important) and use a 1/4 cup measuring spoon for scooping out the mixture. Cook evenly on each side for 2-4 minutes or until golden brown. This recipe makes up to six servings of medium-large pancakes.
