Ingredients

    1 large yellow bell pepper
    1 large orange bell pepper
    2 cubanelle peppers
    1 med/large onion
    2 large zucchini-shredded
    1 kg lean ground turkey
    4 cups (2 cans) black beans
    1 can chipotle pepper-chopped (1/2 can if like less spicy)
    1 cup low sodium chicken broth
    1/4 cup tomato paste
    4-5 cloves garlic
    cumin, chili powder, salt and pepper to taste
    fresh cilantro

Directions

Saute chopped onion and garlic in olive oil, add turkey and brown. Add to slow cooker with remaining ingredients except cilantro and cook overnight on low, or simmer until blended on stove. Add cilantro at end of cooking.
