Introduction

Good low calorie main dish. Good low calorie main dish.
Number of Servings: 8

Ingredients

    2 cups Zucchini squash shredded
    1/2 cup Egg Beaters
    16 oz. ground turkey 93% fat free
    1/2 cup Kraft Free shredded cheese
    1 can del monte diced tomatoes no salt
    1/2 cup Parmesan cheese grated
    1 clove garlic

Directions

Preheat oven to 400 degrees.

Cook, drain and rinse ground turkey sausage.
Shredd zucchini in food processor or by hand.
Blot with paper towel. Drain tomatoes.
Mix all ingredients except Parmesan cheese. Spray 9 x 11 baking dish with nonstick spray.

Spread mixture into baking dish. Sprinkle Parmesan cheese on top. Bake in 400 degree oven for approximately 20 minutes or until moisture on top disappears. This will take longer if you don't blot the zucchini throughly.

You can use ground turkey sausage for a little more spicey flavor or you can use tomatoes with green chilli's to make it mexican zucchini pizza

    Very Easy and tasty...instead of turkey I used Jimmy Deans hot sausage...more fat but ok once in a while. Hubby and daughter loved it. - 3/15/10

    This dish was very yummy, even though I reduced/cut out some ingredients to lessen calories. I reduced both cheeses by half and no turkey; couple of TBSP of bacos instead but still extremely good; I' m making another batch to take to our 'Fathers Day Pizza Party' as an alternate pizza.     Very good. I put some sliced fresh mushrooms on top before adding the parmessan cheese, made it even more yummy! - 8/27/07
