Ingredients

    Trader Joe's Basmati Rice Medley 4.5 cups prepared (or 1.5 cups dry)
    1 tsp saffron
    1/2 tsp salt (or salt to taste)
    1 Tbsp olive oil
    1 lb raw shrimp
    6 oz snow peas

Directions

Prepare basmati rice. Add salt and saffron during preparation. To prepare saffron, quickly toast it by placing in a metal container over stove burner. Be careful not to burn, just dry it out. When saffron is crispy, crush it with a spoon and add it to the rice as the rice is cooking.

Saute shrimp with olive oil. Combine with rice. Add snow peas and continue to cook for a few minutes, until snow peas are no longer raw.

Makes 8, 1-cup servings.
