Introduction

This version of a classic dish is easy to prepare, and may be made in advance and reheated. The chicken becomes so tender it almost falls off the bone and the garlic imbues the chicken with flavor.

Don't be alarmed by the amount of garlic. It really tastes good, almost like butter!

    3 tablespoons olive oil
    6 chicken legs, skinned
    6 chicken thighs, skinned
    1 cup parsley
salt and fresh ground pepper to taste
    1/2 teaspoon ground allspice
    1/4 teaspoon cinnamon
1 1/2 cups dry white wine

Cover the pot tightly with foil. Place the lid over the foil. The pot must be very well sealed so that no steam can escape. Place the tightly covered pot in the oven for 1 1/2 hours.
