Ingredients

1 tbsp olive oil
1 lb stew beef, cut into bite size cubes
1 onion, shopped
2 tsp minced or pureed garlic
1/2 lb sliced mushrooms
1 tbsp whole wheat flour
1/2 can (398ml/14 oz) of diced tomatoes (no salt added)
1/2 cup low sodium chicken broth
1 cup sliced red pepper
Black Pepper (lots!)
Directions
Heat olive oil in a pan. Brown beef. Transfer to slow cooker. Add onion and garlic to pan. Cook until tender. Add mushrooms and cook until slightly tender. Add flour, toss to coat and cook for one minute. Transfer to slow cooker. Add remaining ingredients to slow cooker.
Cook on LOW for 8 hours, or High for 4 hours. Serve on top of noodles, rice or potatoes and top with a dollop of sour cream (optional)
