Introduction

For those of us who haven't mastered the flip, here's an alternative to an omlette. Think of this as enhanced scrambled eggs.

This is not fat free by any means, but a nice splurge for a fall weekend morning.

Fat free cheese, egg whites, and turkey sausage can be substituted easily, and shorten the cooking time slightly. Because the eggs provide moisture, fat free cheese works especially well in this recipe.

Ingredients

    2 Bob Evan's Original Pork Sausage Patty
    1/4 c. chopped onion
    1/4 c. fresh chopped red or orange pepper
    1 T Canola Oil (optional) 2 large eggs
    Savory spices to taste (pepper, paprika, cumin, etc.)
    Dash Tabasco (optional)
    1/4 c. shredded cheddar Cheese

Directions

Heat an iron skillet. Add canola oil, vegetables, and sausage over low/medium heat. (If using a non-stick pan, the canola oil isn't needed). Chop up the sausage patties into chunks as they cook. The vegetables should be soft but not mushy by the time the sausage is done, about 5 minutes.

Meanwhile, scramble the eggs with the spices and tabasco. When the sausage is done, add the egg mixture, then sprinkle the cheese over the top. Let sit in the pan and cook for about 3 minutes.
Run a spatula across the bottom of the skillet cross wise - ( if the skillet is a clock, move your utensil from 12 to six and 9 to three). Scoop up about 1/3 of the mash up and turn it over.

Repeat with the other two sections. Continue to cook for about 2 more minutes, until the eggs are done and the cheese is melted (longer if you, like me, like your eggs really dry).
