Ingredients

Baby or Regular carrots, choppped - 3 cups
Celery, chopped - 3 cups
Boneless, skinless chicken breast - 20oz
1 can waterchestnuts, approx 1 cup drained
1 head of broccoli - chopped
Teriyaki sauce - 1.5 cups
Olive oil - 2 tbs for cooking chicken
Crushed Pineapple from can - 1 cup
Dry roasted cashews - 1 cup
Directions
Prep: Chop celery, carrots and broccoli into small pieces.
Cut approx. 20 oz. of chicken breast into 1" cubes. Saute in large pan with 2 tbs olive oil until cooked. Add celery, carrots, broccoli and teriyaki sauce. Let simmer approx. 10 minutes, stirring occasionally. Add pineapple with juice, water chestnuts (drained), and cashews. Stir and let simmer for another 10 minutes. Makes approx. 10 8oz servings. Serve over brown or white rice.
