Introduction

Ingredients

1 cup sweet glutineous rice
water
2 tbsp sugar
2 pinches salt
1 cup coconut milk
Directions
Rinse rice in multiple changes of water until water runs clear. Place rice in bowl and cover with water. Let soak overnight.
Cover bottom of a steamer basket with cheesecloth. Pour rice on cheesecoloth and cover. Steam 20 minutes until rice becomes translucent.
Meanwhile, heat the coconut milk in a saucepan over medium heat. Stirring constantly, bring milk to a simmer. Do not let it boil as it will curdle. Add sugar and salt, stirring to combine. Remove from heat.
Place hot rice in a bowl and pour 3/4 cup of coconut milk over it. Let sit 5 minutes; the rice should absorb the milk and become slightly mushy. Peel and slice mango. Serve with the extra coconut milk.
