Ingredients

2 boneless, skinless chicken breasts
2 tbsp honey
2 cubic inches of blue cheese
6 dried apricot halves
1/2 cup dry bread crumbs
1 tsp dry mustard
1/2 tsp paprika
salt and pepper
Directions
Preheat oven to 350 degrees. Cut a pocket into the side of each chicken breast breast. Stuff the blue cheese into each pocket. Slice apricot halves and also place inside chicken breast. Set aside.
In a bowl, combine breadcrumbs, dry mustard, paprika and salt and pepper. Set aside.
Brush the chicken breasts with 1 tbsp of honey each. Next, coat the honey-covered chicken with the breadcrumbs. Place the breasts in an oven-safe baking dish--you may wish to coat the dish with a fat-free cooking spray. Bake at 350 degrees for about 30 minutes.
