Introduction

Everything is made from scratch, ground corn, ground oats, pureed pumpkin, but low fat and tasty Everything is made from scratch, ground corn, ground oats, pureed pumpkin, but low fat and tasty
Number of Servings: 36

Ingredients

    1 cup ground popcorn (cornmeal)
    1/2 cup ground oats
    1/2 cup flour
    2 T sugar
    1 T baking powder
    1/2 tsp salt
    2 eggs
    1 cup skim milk
    2T pumpkin puree
    2T olive oil
    1 can drained corn

Directions

Grind popcorn, oats and puree cooked pumpkin
Mix first 6 ingredients
Mix next 4 ingredients separately and then add to first 6 with canned corn, beating until just smooth. Fill mini-muffin pan with 1 T batter per muffin for calories given. Bake in 425 F oven for about 10 min.
