Introduction

This is great as a side dish, with tortilla chips, over greens or as a topping on chicken or fish. Great way to use up leftover ears of corn or an explosion of home grown tomatoes. Ingredients

    Frozen corn (or one can) half 8oz pkg
    2 large fresh tomatoes (or one can diced)
    1/2 onion, any type
    1-2 TBS lime juice or fresh squeezed
    1 TBS dried cilantro
    1 tsp black or white peper
    1-2 tsp salt to taste
    1 jalepeno or more to taste
    other spices: can use jalepeno dust or other spices to taste

Directions

If using frozen corn, microwave with some water for about a minute, drain.

strain and rinse canned beans
chop tomatoes
chop onions
mix all ingredients in large bowl.
Serve

Tastes best if left to sit for about an hour, stirring occasionally to mix flavors.

Serves 6 with large 1+ cup size portions
