Ingredients

4 Slices White Bread
1 Tbsp Ground Cinnamon
1 Tbsp Imitation Vanilla Extract
3 Egg Whites
2 cantaloupe wedges (about 1/4 of cantaloupe)
1/4 Cup Vermont Sugar-Free Maple Syrup
1/4 Cup Skim Milk
3 Tbsp Light Cream cheese
2 Tbsp Cool Whip Free
Fat Free Cooking Spray
Directions
This recipe makes ONE LARGE SERVING of stuffed French Toast for under 600 Calories, with all the fixins...
* Separate egg whites from 3 eggs into a bowl. Discard yolks.
* Mix in 1/2 cup of skim milk, 1 Tbsp vanilla extract and 1 Tbsp ground cinnamon
* Whisk together
* Heat up large skillet and coat with non fat cooking spray
* Coat each piece of bread (4 pieces white bread) in the egg and milk mixture.
* Put each piece of bread in pan, and cook until browned (about 2 1/2 minutes); flip and cook until the other side is browned (about another 2 1/2 min).
* Remove bread from heat.
* Make a "sandwich" out of cantaloupe and1 1/2 tbsp of cream cheese (you will have 2 "sandwiches")
*Add back into pan, cooking an additional 1-2 minutes on each side.
* Serve with 1/4 cup of sugar free syrup (I use the Vermont brand, because it contains the least amount of calories, about 10 per 1/4 cup..) and/or 2 Tbsp Cool Whip Free
