Introduction
My daughter asked for stuffed peppers. This is what I came up with.The yellow, orange, and red peppers are more nutritious than the green so that is what I used. My daughter asked for stuffed peppers. This is what I came up with.

Number of Servings: 5
Ingredients

5 Medium Peppers (red, orange, yellow)
( 1 pepper per person) cut in half, seeds and membrane removed)
3/4 cup Brown Rice( You can use quick cooking if you prefer)
1 3/4 cups water
100% Extra Virgin Olive Oil Cooking Spray,
20 oz. Extra Lean Ground Turkey
2 Tbsp Extra Virgin Olive Oil
1 Onion diced
3 Cloves garlic chopped
10 Tbsp "Wishbone Sweet and Spicy French Dressing"
2 tsp hot sauce (more or less to taste)
5 Slices Tomato cut in half
5 Tbsp Shredded parmesan Cheese
salt
pepper
garlic powder
onion powder
Directions
In a small pot with tight lid,on medium to medium high heat olive oil, add 1/2 the garlic, stir til translucent. Add rice, water, a pinch of salt, pepper, and red pepper flakes, and cook according to package directions. (Should take about 45 minutes)
Preheat Oven to 400 degrees
While rice is cooking Spray skillet with cooking Spray and brown Ground Turkey. Add onion, remaining garlic, dressing, hot sauce and a pinch,(more or less depending on your taste),of each seasoning.
When rice is ready, add it to the ground turkey Mix and taste to adjust seasoning.
Fill each pepper half with the meat mixture, top each one with a tomato slice, sprinkle with parmesan cheese,
Bake for about 15 minutes, or until cheese is bubbly and lightly brown.
