Introduction

A delicious Asian, veggie-loaded soup that's satisfying enough for winter, yet light enough for summer. Fantastic with a splash of lime juice or a shot of fire oil!

Serve with brown rice sushi or wasabi-soy glazed salmon for a fantastic dinner!

Ingredients

    2 oz. Udon Noodles
    1 quart vegetable broth
    1.5 Tbsp red miso (at the asian mkt)
    1/4 cup thinly sliced celery
    1/4 cup chopped scallions
    2 oz. shiitake mushrooms
    1 cup shredded napa cabbage
    Salt, to taste (personally, I don't think you need any!!)

Directions

~Prepare Udon according to the package directions
~Combine broth and miso and bring to a boil
~Add the vegetables, reduce heat, and simmer for 5 minutes.
~Add salt, if desired. I personally think that the broth and miso are quite salty enough!

*If you can't find red miso, use white miso or even an envelope of miso soup mix.
