Introduction

My mother-in-law (whom is a great cook) gave me this recipe. It is easy, but really yummy! I have made it for week night suppers and fancy occassions. We mix up the spices we use in it constantly. It can be cooked in the oven or the crockpot. I usually cook mine in the crockpot. My mother-in-law (whom is a great cook) gave me this recipe. It is easy, but really yummy! Ingredients

    3 lb. pork tenderloin roast
    1/2 tsp. salt
    1/4 tsp. pepper
    1 c. unsweetened applesauce
    3 Tbsp. Dijon mustard
    1 Tbsp. honey
    3 fresh rosemary sprigs

Directions

Sprinkle roast with salt and pepper (or any other seasonings you prefer). Brown the roast on all sides in a nonstick skillet. Place on a rack in a shallow roasting pan. Combine applesauce, mustard and honey. Spread over roast. Top with rosemary. (I usually put the dried crushed rosemary on the roast with the salt and pepper). Bake, uncovered at 350 for 1 3/4 -2 1/2 hours or until a meat thermometer reads 160. Let stand 10 min. before slicing
OR
put in crockpot, rather than roasting pan, on low for approx. 6 hours.--We usually do the crockpot version.

Makes 12-3 oz. servings or 9-4 oz. servings. Calories are done for the 3 oz. serving size.

    I have also cut up a mango and an onion, with applesauce on top. Yummy! is very good with applesauce and onion. This is on our weekly menu, leftovers are wonderful!
