Ingredients

8 oz ham, cut into 1/4" slices (i like black forest ham)
2 lbs red potatoes, peeled & cut into 1/4" slices
1/4 C finely chopped onion
3 TBSP butter
5-6 TBSP flour
2 1/2 cup milk (i use 2%)
1 tsp salt
black pepper to taste
Directions
Heat oven to 350.
Heat the butter in a medium saucepan. Add onion and gently sweat until translucent.
Sprinkle in flour & whisk it into a paste.
Cook 2-3 minutes whisking constantly.
Add the milk and whisk until smooth. Season with salt & pepper and bring it to a simmer, stirring occassionally. Gently cook for approximately 5 minutes.
Spread a couple of spoonfuls in the bottom of a casserole dish sprayed with PAM. Then in 3 layers, layer potatoes, ham (ripped into pieces) and sauce. It won't look like you have enough sauce, but the moisture from the ham & potatoes will add to the sauce mixture.
Cover and bake for 60 minutes. When the potatoes are tender, remove the cover, raise oven temperature to 375 and back an additional 15-20 minutes.
Makes approximately 6 1-cup servings.
