Introduction

Creamy & Smooth! Perfect AUTUMN dessert. This "pudding" is dairy free and gluten free. All ingredients can be adjusted to your own taste. Number of Servings: 6

Ingredients

    2 Cups of Pumpkin Puree (I used fresh baked pie pumpkins)
    1 Cup Whole Coconut Milk (you could use low fat)
    1/2 Cup Rapadura or other sugar of your choice
    1/4 tsp salt
    1 tsp Pumpkin Pie or other spice (more or less to taste)
    1/2 tsp vanilla

Directions

Throw all ingredients in a big bowl and blend with your immersion blender until smooth and creamy. You could also use a blender or food processor but I think the immersion blender works GREAT for this. You can eat it right then and there or chill it. Can be made even more delicious if you add a whipped topping but it's wonderful AS IS! All ingredients are easily adjustable to whatever your personal tastes are. I just kind of throw this one together without even measuring. I just taste my way to the perfect union of ingredients! YUMMY!!!
