Introduction

Number of Servings: 6

Ingredients

    1/2 t Smart Balance
    1/4 cup onion, chopped
    1/2 cup Spicy V8
    3/4 cup water
    1 bay leaf
    1/2 cup lentils, rinsed and picked over
    1/2 cup whole wheat couscous
    1 small tomato, chopped
    1/4 cup basil, chopped
    1 T vegetarian Parmesan cheese


Directions

Saute onions in Smart Balance for a few minutes, until tender. Add the V8, water, bay leaf, and lentils. Bring to a boil. Reduce heat and simmer 25-35 minutes, or until lentils are soft but not mushy. You may need to add some extra water if the lentils soak it all up. Turn off the heat, stir in the couscous, tomato, basil, and cheese. Let sit 5 minutes. Season with salt and pepper to taste. Fluff with a fork and serve hot.
Makes 6 servings.
Note- the ingredients finder didn't have whole wheat couscous, so the fiber and calories may be a little bit off since I just figured it using the regular stuff.
