    189g (1-1/2 cups) whole wheat flour
    110g (1 cup) oat bran
    45g (1/2 cup) ground flax seed
    2 tsp. baking powder
    1 tsp. baking soda
    1-1/2 tsp. cinnamon
    1 tsp. nutmeg
    1/2 tsp. salt
    188g (1 cup) sucanat or 200g brown sugar
    2 cups unsweetened applesauce
    1-1/2 cups buttermilk
    3 eggs
    2 tsp. vanilla
    2 T. oil
    114g (2/3 cup) mini chocolate chips


Preheat oven to 400. Spray 24 muffin cups with non-stick spray. In a large bowl, combine all the dry ingredients. In another bowl, whisk together all the wet ingredients. Stir wet into dry just until mixed. Stir in chocolate chips. Divide among the muffin cups. Bake for 16 - 20 minutes or until done. Makes 24 muffins.
