Ingredients

    1 cup fresh sweet corn
    1 cup red pepper, sliced
    2 small (3" long) scallions
    Juice of 1 lime

Directions

In serving bowl, combine corn, red pepper, and scallions. Toss with lime juice and season with salt and pepper to taste.

    Loved this recipe. Fast, fresh and yummy. I think next time I'm going to add cilantro to the mix and try it that way. Oh, by the way, I used frozen corn...just thaw and go! - 5/4/08
