This soup is amazing and filling! This soup is amazing and filling!
Number of Servings: 10

Ingredients

    1 cup chopped onion
    3 tbsp butter
    1 sm can mushrooms
    2 cups asparagus cut into 1/2 inch pieces
    6 cups chicken broth
    1/2 cup chopped fresh parsley
    1/2 tsp salt
    1/2 tsp dried thyme
    1/4 tsp pepper
    1/8 tsp cayenne pepper
    2 cups cooked wild rice
    3 tbsp cornstarch
    1/3 cup water

Directions

saute onions and mushrooms in butter for 4 minutes. add asparagus, broth and seasonings, cover and simmer for 30 minutes.
add rice. combine cornstarch and water until smooth; gradually stir into soup. bring to a boil; cook and stir for 2 minutes until thickened.
Recipe equals 10 - 1 cup servings
