Ingredients

1/2c Carrots, chopped
1/2c Celery, diced
1/2c Cucumber, pared and chopped
1/4c Bell Peppers, chopped
1/2 Jalapeno Pepper, chopped
1 clove Garlic, finely minced
1/2 Scallion, chopped
1/4c Cilantro, chopped
2 5.5oz cans Low Sodium V8 juice
1 small can Tomato Sauce
1T balsamic vinegar
1t. Fennel seed
1t. Olive Oil
1t Tabasco Sauce
juice from 1/2-1/4 of a lime
1 cup Water
salt, black pepper, ground cumin to taste
Directions
Pour liquid ingredients into a container with a lid. Add finely minced garlic, scallions, oil, vinegar, fennel seeds, and lime juice. Chop all vegetables to approximately the same size and add to broth. Top with fresh chopped cilantro.
Adjust seasonings to taste (salt, cracked black pepper, smoked paprika, ground cumin). Stir to combine and refrigerate thoroghly. Serve very cold.
Serving suggestions: may be served with sour cream or plain yogurt, fresh herbs(dill,basil, oregano, tarragon), diced green onion, olives, avocado slices, hard boiled egg, tortillas or bread. Beautiful when served in clear bowls or cups - a clear dish set above ice is great for parties.
Variations: add cooked seafood when serving, a splash of wine, chayote or other squash, diced fresh tomatoes, diced spinach or arugula, omit oil if desired - still good!
