Introduction

I just made this on the spot and it was delicious. Really fast and warm and filling. I didn't use a cooking spray on the pan, the bacon provided enough oil/greasiness for frying. Ingredients

    2 small potatoes, chopped and boiled
    3/4 cup onion, chopped
    5 slices beef bacon ( leaner than pork bacon)
    1 cup Frozen Vegetable blend ( i used MC Five Vegetable Blend)
    Spices to taste ( I used rosemary, salt and pepper)

Directions

These are the ingredients I used, but feel free to throw in what you have available; that's the beauty of it! I like onions and potato so anything else I throw in usually goes well with those no matter what.
These measurements serve 1.

Chop Potatoes and put on to boil.
Chop and put onions and bacon in frying pan at med-high heat for 3 min ( approx)
Add frozen vegetables .
When potatoes are are soft, drain and add them to the pan, making smaller chunks with your stirring utensil.
Add seasoning.
Fry to desired 'doneness' and serve!
