Introduction

This recipe is not exactly low-cal, but it is delicious, and I wanted to see how many calories it would have in it. This recipe is not exactly low-cal, but it is delicious, and I wanted to see how many calories it would have in it.
Number of Servings: 4

Ingredients

    1 cup cornmeal
    1 egg, beaten
    coarse salt
    black pepper
    1 lb. small okra (3” long or less), stems removed
    1/4 cup peanut or canola oil (approx.)
    lemon wedges

Directions

* Cut okra cross-wise into ½” pieces. Toss the okra in the beaten egg so they are all coated.
* Place cornmeal, salt, & pepper in small brown or plastic bag. Drop egg-coated okra into bag & shake to coat. Shake in strainer to remove excess cornmeal. Should be “dusted”.
* Heat ¼” of oil in 11” or 12” skillet over high heat. When oil is shimmering add okra & fry. Turn occasionally. About 4 mins.
* Okra should be brown & crisp. Use slotted spoon to transfer to platter with paper towels.
* Sprinkle with salt & pepper. Serve with lemon wedges.
