Introduction

These are the croutons I came up with to go on top of my chicken noodle soup. They also go really well with French Onion Soup These are the croutons I came up with to go on top of my chicken noodle soup. They also go really well with French Onion Soup
Number of Servings: 16

Ingredients

    4 slices whole wheat bread
    8 large cloves raw garlic
    1/2 cup salted butter

    (1 cup olive oil)


Directions

set butter out and allow it to come to room temerature.

in a saucepan, take the olive oil and heat it over med-high heat.
add raw whole garlic cloves and cook them in the olive oil until golden brown. Remove and place in a bowl to cool.

NOTE: DO NOT throw the oil out. It is now infused with garlic, and is good to use for other dishes. Find a container and when it cools, place in container and reuse as needed.

mash cooked garlice and whip into butter.
Pre-heat oven to 350 degrees.
I have a set of pampered chef cookie cutters in a small tin. They are various shapes themed for the holidays.
Take a basting brush and brush butter on one side of bread.
Using your cookie cutters(they are really small) place them on bread and cut out pieces. I can usually get about 7 out of one slice.
put pieces on a cookie sheet, butter side up into oven for 1-2 minutes.
take out of oven and flip each crouton. put back in oven for another minute or so.
WATCH CLOSELY!!!!
Take out of oven and garnish a cup of Ren's chicken noodle soup with 2 or three.
Serves 16.
you can also use these croutons for salad, or French onion soup.

The roasted garlic butter is also good on cooked pasta.

Don't forget to use your garlic infused olive oil for salad dressings, or to sautee onions in for your next meal.
