Ingredients

    1 pound tilapia
    1 15 oz. can pineapple chunks (save juice)
    1/4 cup brown sugar
    1/4 cup ketchup
    1/4 cup low sodium soy sauce
    3 TBS white vinegar
    3 TBS orange juice
    2 TBS corn starch
    5 TBS canola oil
    1 medium green or red sweet pepper chopped

Directions

Cut fish into chunks and set aside. Drain pineapple, reserving 3/4 cup liquid. For sauce combine reserved pineapple juice, brown sugar, ketchup, soy sauce, vinegar, orange juice and cornstarch. Set aside. Add 1-2 TBS. of oil to a large skillet; preheat over medium high heat. Stir fry the sweet pepper for 1.5-2 minutes or till crisp tender. Remove from skillet. Stir fry half of the fish for 3 to 5 minutes, or till fish flakes easily with a fork; remove. Stir fry remaining fish; remove. Stir sauce; add to skillet. Cook and stir till thickened and bubbly. Stir in pineapple, sweet pepper and fish. Heat for several minutes. Serve over rice. Makes 5 servings.
