Ingredients

    1 eggplant
    2 eggs
    2 slices bread (torn)
    1/4 c. bread crumbs
    1 T pimentos / redd bell pepper / or pimento cheese spread
    1 tsp salt
    2 T butter
    1/2 c. milk
    1/2 tsp sugar

    1/4 c. grated cheese

Directions

- Chop eggplant into about 8 pieces and boil in salted water until tender (5-10min).
- Mash and mix with all other ingredients except the grated cheese.
- Sprinke cheese on top.
- Bake for 20min at 350 in casserole dish.
