Number of Servings: 3

Ingredients

    1 cup rolled barley flakes
    3 cups water
    1/4 to 1/2 tsp salt
    1/2 cup canned pumpkin (not pumpkin pie mix)
    1 tbsp Splenda Brown Sugar Blend (or plain brown sugar)
    2 tsps pumpkin pie spice
    1/2 tsp ground cinnamon

Directions

Bring 3 cups of water to a rapid boil in a medium saucepan. Add barley and remaining ingredients and stir to combine. Cover and cook on low heat for 20 minutes or until barley is tender and most of water is absorbed, stirring once or twice. Remove barley from heat and let sit for 5 minutes. Sprinkle with a little cinnamon, garnish with chopped pecans or walnuts (optional) and serve with milk or soy milk. Makes 3 servings of approximately 1 cup.

    When I first saw this recipe I thought it was something different to serve for dinner. I then realized that it was something to serve for breakfast which through me off a bit as to what to make for dinner. I believe it should have been stated for breakfast. I added more sugar. I give it 2*'s. - 7/16/17
