Ingredients

2 cups flour mixture
(Example:
¾ c. whole wheat,
¾ c. unbleached white
½ c. oat)
¼ cup ground flax seed
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
1 cup soy milk
1/4 cup walnut or vegetable oil
1 teaspoon vanilla extract
2 egg whites (1/3 cup)
Water 1/2 cup or as needed
Directions
1.In a large bowl, mix together flour, flax seed, salt, baking powder and sugar
2.Stir in the milk, oil and vanilla.
3.Let mixture rest 10 to 30 minutes
4.Preheat waffle iron to desired temperature.
5.Beat egg whites into foam.
6.Fold egg whites into the batter.
7.Thin with water as needed.
8.Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp.
9.Serve immediately or keep warm in a 175 degree oven.
Serve with fruit, yogurt and maple syrup.
