great for using up leftover chicken. great for using up leftover chicken.

Ingredients

    2 chicken thigh, cooked and chopped
    1 small apple
    1 medium stalk of celery
    2 tbs. of pecans
    2 tbs of light mayonnaise - I prefer the olive oil version

Directions

chop up everything and mix with mayonnaise. Makes two generous 1 cup servings.
