Introduction
This is an old family recipe, but I tweaked it to make it much healthier. These are great as muffins, but you can also do a loaf. It's great for breakfast, a snack or presents for the holidays. Ingredients

1/4 cup butter
1 cup Splenda
4 egg whites
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
2 cups flour
1 1/4 unsweetened applesauce
Cooking spray
Directions
Preheat oven to 350 degrees
Mix softened butter with splenda and egg whites. In a separate bowl, sift flour, nutmeg, cinnamon and baking soda together. Gradually add dry mixture to wet mixture. Try not to overwork the batter. After combined, stir in the applesauce.
Spray muffin or loaf pan with cooking spray. Pour batter into pan. Fill each muffin cup about 2/3 full or fill the loaf pan with the whole batter.
Bake muffins for 15 minutes. Bake loaf for 1 hour. Please check on them around this time, because ovens will vary. You should be able to insert a toothpick or knife and have it come out with no liquid batter on it. Don't over-cook them, they are better when moist.
Makes 12 muffins or 12 servings in 1 loaf.
