Introduction
This is good for someone that has had the lapband and is in the soft food stages. It is also a hearty meal and keeps you full for a good amount of time. I did not use extra lean ground beef or low-fat or fat-free cheddar cheese which would make for a lower calorie value. Ingredients

1 pound of ground beef
1 can of fat-free refried beans
1 cup of shredded cheddar cheese
1 medium onion, chopped
6 plum tomatoes, chopped
1 medium bell pepper, chopped
chili powder to taste
garlic powder to taste
Directions
1. Brown ground beef. While the beef is browning, you can add some chili powder and garlic to it. Also, you can be chopping the onion, bell pepper, and tomatoes.
2. When ground beef is browned, drain it. Then return to stove and add onions, bell pepper and tomatoes. I like to add additional chili powder and garlic powder here. Simmer this mixture until onions and bell pepper are soft.
3. After about 10 minutes, add the refried beans and the cheddar cheese. You do not need to add water or any other liquid. You will want to add more chili powder and garlic powder to your taste.
4. Simmer for about 5 more minutes to blend flavors.
5. Spoon into a bowl and serve.
This will make about 8 one cup servings. It stores well and tastes better the next day.
