Ingredients

2 large eggs
2 cups buttermilk
1 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
2 cup corn meal
2 Tbsp. shortening added to hot skillet
Directions
Preheat oven to 450 degrees. Put 9"- 10" iron skillet in oven to heat while mixing bread. Put shortening in skillet to melt and heat for a couple of minutes before pouring in batter. This will give a nice crust to the cornbread
Beat eggs, add buttermilk ,then add dry ingredients
Add cornmeal last a bit at a time. 2 cup is approximate.
Batter should be soft, not to thin. Pour into hot skillet with melted shortening. Bake about 20 min. Bread will spring back when lightly touched or toothpick comes out clean.
I turn on broiler for a couple of minutes to brown top.
Carefully turn out onto serving platter.
