Ingredients

    1 Medium Cauliflower
    1/2 tsp whole cumin seed
    2 medium onions
    3 cloves garlic
    2 Tbs finely chopped fresh ginger
    3 medium tomatoes, chopped
    2 tsps ground coriander
    1 tsp ground turmeric
    2 tsps ground cumin seeds
    1 tsp ground cayenne pepper
    1 tsp cardamon
    salt to taste
    1 cup fresh cliantro

Directions

Heat oil on high heat. Add whole cumin seed (1/2 tsp) and stir until it sizzles for a few seconds. Add the onions, garlic and ginger:stir fry until a golden brown. Add the tomatoes and continue frying for about 5 minutes until you have a reddish paste. Add the ground coriander, turmeric, cumin, pepper, cadamon, and salt;continue frying until all the spices are well blended in the paste. Add the cauliflower and mix to cover with the paste. Cook for about 8 minutes or until the consistency you desire is reached. You may need to add some water to prevent sticking to pan and to help cook the vegetable. Just before serving top with the fresh cilantro. Serves 6. Great cold or hot. Of course if the cayenne is too hot, leave it out.

    Very Good
    Was glad I added chopped apple and raisins at the last minute for some more flavour. But very tasty way to use up a head of cauliflower! (I used a can of diced, organic tomatoes rather than fresh). - 6/17/13
