Introduction

A wonderful cold-morning meal! Delicious spiced whole-grain oats with pumpkin drizzled with pure maple syrup and topped with toasted pecans. Quick and easy... and you can make enough to last a few mornings in one batch, or enough to feed the whole family! Great way to sneak in a serving of veggies, too! A wonderful cold-morning meal! Ingredients

    3 c. 100% Whole Grain Old Fashioned Oats (not quick-cook)
    5 c. water
    1/2 tsp. salt
    1 1/2 tsp. pumpkin pie spice
    1 tsp. vanilla extract
    3 tbsp. sugar
    3/4 c. canned pumpkin (not pumpkin pie mix)
    3/4 c. pure maple syrup
    1/3 c. chopped pecans, toasted

Directions

In a saucepan, add oats, water, salt, pumpkin pie spice and vanilla. Bring to a boil, stirring frequently, then reduce heat to low and let simmer for 8 minutes or until water is completely absorbed.

While oats are cooking, toast pecans on stove top or in the oven until fragrant.

Once oats are done, stir in sugar then transfer to individual serving bowls. Top each bowl with 2 tbsp of pumpkin, 2 tbsp of maple syrup and 1 tbsp of toasted pecans.
