Ingredients

    6 potatoes, peeled and cut into 1/2 in cubes
    2 med onions, diced
    2 carrots, thinly sliced
    2 celery ribs, thinly sliced
    2 (14.5oz) cans low sodium fat free chicken broth
    1 tsp. basil
    1 tsp. salt
    1/2 tsp. pepper

    1/4 c. flour
    1 1/2 c. fat free half and half
    1 c. cheese

Directions

Combine first 8 ingredients in slow cooker. Cook, covered on HIGH for 3 hours or until veggies are tender.

Stir together flour and half & half; stir into soup. Cover and cook 30 minutes; add cheese and heat through.
