Ingredients

    2 Tbs Olive Oil
    1 Whole yellow or white onion(cut in quarters and thinly sliced
    1 Can Diced Tomatoes (Organic preferred)
    1 bag frozed okra
    1 Can water
    Salt, Pepper, Sweetener

Directions

Saute' Onions in Olive Oil until clear, add tomatoes, okra, and water. Simmer on low heat until okra tender (not long). I use Kosher Salt or Redmonds Sea Salt and Pepper to taste. You can add a packet of Truvia or yellow or blue sweetener if you want a tad of sweetness. This is a side dish or even vegetarian entree if you serve with rice, beans, or cornbread. This makes 4 1-cup servings (estimate).
