Ingredients

    1 brown onion (150g)
    1 medium red pepper (capsicum)(120g)
    1 810g tin of chopped tomatoes
    Fresh or dried basil
    1 tsp minced garlic

Directions

Chop onion and capsicum.
Heat oil in non-stick frying pan
Add garlic, fry 1 minute on high.
Add onion and capsicum, fry for 5 minutes until soft.
Add tomatoes reduce heat to low and simmer until sauce thickens.
Add fresh basil at the last minute or dried basil with the tomatoes.



This is a quick and easy sauce/topping to put on schnitzels or grilled chicken breast (add cheese and grill). I also put on top of mash potato to top up my portions of vegies for the day.

The photo included is grilled chicken breast with the parmigiana sauce topped with cheese and put under the grill for a few minutes.
This is a low carb dinner when seved with a mixed green salad.
