Ingredients

    1 cup flour
    1 cup whole wheat flour
    1/2 tsp salt
    1/2 tsp baking soda
    2 1/2 tsp baking powder
    1/4 tsp nutmeg
    1/8 tsp ground cloves
    1 tsp cinnamon
    1/3 cup canola oil
    1/3 cup brown sugar
    2 eggs
    1/3 cup orange juice
    1 cup pumpkin puree
    1/2 cup chopped walnuts

Directions

Mix as per any muffin recipe.
Bake at 350 for 15 - 20 minutes.
Serves 12.

    Great recipe! I recalculated using 3 Tbsp Sucanat for the brown sugar, used two egg whites for one egg, less walnuts, and added dates. It would be great with other dried fruit too! I think I'll see if next time I can reduce the oil a bit by using some Flaxseed and Applesauce. YUM. - 12/30/09
