Introduction

Some people like to puree black bean soup. We like it kjuust like this with a dollop of low fat sour cream and maybe a couple of peices of avocado on top. I also like to have this with some leftover rice throw in. Some people like to puree black bean soup. Ingredients

    i pks black beans (boiled and rinsed)
    1/2 red onion
    2 stalks celery
    2 large carrots
    4 packets goya chicken broth
    3 tbls sofrito
    1 tbls. tomato paste
    8-10 cups water

Directions

First cook black beans in water to soften partially. Drain and rinse (this helps with any bean issues you may have) Saute onion and garlic in pan. Add all the rest of the ingredients and let cook for as loong as you like, You can also throw everything into as slow cooker (after cooking and rinsing beans) Don't bother sauteing the onion and garlic and cook on low for 8-10 hours.
