Introduction

This is a little lighter version of chicken parm...and pretty easy, too! This was made with string cheese the first time because that's all I had...and it was so good, that's just what we use. Ingredients

    2 - 4 oz chicken breasts
    1/2 cup tomato sauce
    1/4 cup whole wheat bread crumbs
    2 light string cheese sticks sliced
    1 TBSP olive oil

Directions

Mix together tomato sauce, bread crumbs, and string cheese in a small bowl.

Butterfly chicken breasts and rub outside with olive oil.

Stuff 1/2 of the tomato sauce mixture into the chicken and fold in half.

Broil 10-12 minutes on each side.
