Ingredients

    3 pounds chicken breast cubed, no skin
    2 Tbs. olive oil
    1 large yellow onion, chopped
    4 cloves garlic, minced
    2 tsp. salt
    1 tsp. ground pepper
    2 Tbs. ground cumin
    6 cups chicken broth, Swanson low sodium
    4 poblano chiles seeded & chopped
    2 jalapeno peppers, seeded & chopped
    1 large yellow bell pepper, seeded & chopped
    1.5 pounds tomatillos, husks removed
    1/2 bunch cilantro leaves chopped
    2 cans (15.5 oz) white kidney beans, drained
    1/2 cup ground flax seed

Directions

brown chicken cubes in oil and add onions, garlic. Cook until onions are translucent. add salt & pepper, cumin, chicken broth & ground flax seed. Simmer 1/2 hour.
Add all peppers & pureed tomatillos , cilantro & white kidney beans. Cook 30-45 minutes more.
