Ingredients

    3 medium size potatoes
    ½ cup Ranch Dressing Light
    ½ cup Sour Cream Light
    2 oz FF Shredded Cheddar Cheese
    2 oz Shredded Cheddar Cheese
    1 oz Bacon Bits
    1 tbsp Parsley
    1 tbsp Country Crock butter spread
    1 cup Corn Flakes, crushed

Directions

Preheat oven to 350 degrees. Peel potatoes and cut into thin slices. Boil potatoes until tender, about 10 min. Mix cheddar cheese together and set aside. In a separate bowl mix sour cream, ranch dressing, bacon bits, parsley and ½ of the shredded cheddar cheese, (approximately 2-oz). Pour mixture into casserole dish, letting it settle. When potatoes are tender drain and add to casserole dish making sure to coat potatoes well with sauce mixture. Sprinkle the rest of the Shredded Cheddar Cheese over potatoes. Melt butter spread in microwave. Mix in crushed corn flakes tossing gently. Spread this topping evenly over cheese and cover casserole dish. Bake at 350 degrees Fahrenheit for 40-45 minutes.
