Introduction

Mom's homemade peanut brittle is a must in the holidays. Make about 30 1"by3" inch pieces after broken up. Mom's homemade peanut brittle is a must in the holidays. Make about 30 1"by3" inch pieces after broken up.

Ingredients

    1/2 cup light corn syrup
    1 cup sugar
    1 cup raw spanish peanuts
    1 tsp vanilla extract
    1 tsp margarine
    1 tsp baking soda

Directions

Mix sugar and corn syrup in a heavy duty glass microwave bowl - must be at least quart size. Add spanish peanuts. Microwave for 6 - 8 minutes - depending on altitude. Watch carefully as to not burn peanuts. Remove from microwave and add vanilla and margarine. Stir vigourously with wooden spoon. Microwave again for 1 1/4 minutes to 1 1/2 minutes. Remove add baking soda - stir in quickly until light and foamy. Pour on a sprayed (cooking spray) cookie sheet . Do not spread out. Wait until hard and see how well it cracks. If not sticky - it works. If it sticks to your teeth cook a few seconds longer
